
“Dessert Lefse" for
We prepared a triangle of lefse, spooned lingonberry jam down the middle, topped it with whipped cream (from a can, easiest way to do it), put whipped cream on the edges of the triangle to help it stick, and folded each side towards the middle. It looked a bit like a burrito, of sorts. We served them wrapped in a small sheet of tin foil. Because of the heat of the summer, we had to make them as they were ordered. The lefse and lingonberry jam were delicious!! The lingonberry jam would be great over ice cream too, I think.
"Vikings on a Stick".......meatballs dipped in a batter with corn meal added, deep fat fried and served on a skewer......with catsup and mustard if people wanted it. Very tasty!! Meatballs actually came from Sam's Club –
It seems that some lodge has been serving these two items above at small fairs for years and has made quite a bit of money.
